Gluten-free madeleines—and yet they’re real madeleines. The texture, the taste—they’ve got it all, and they’re actually quite popular.

A customer at Pepilou's who had recently gone gluten-free, on the day the shop opened: "A madeleine? Oh no, thanks. I like real madeleines—I used to be a big fan of them." Never mind, we challenged him to try one. His reaction?"Wow, this is a real winner!"

About Pepilou's pastries

Pepilou's pastries are made with simple, authentic ingredients. It is these natural ingredients, their quality, and our expertise that make our pastries truly delicious.

In particular, we use: almonds, hazelnuts, coconut flour, coconut milk, maple syrup, coconut sugar, fresh fruit, etc.

Nothing fancy, nothing artificial—always choosing products with 0% additives and "junk."

Sugar is part of the enjoyment—there’s no question of trying to leave it out. That said, we use it in moderation, partly for health reasons (to avoid sugar spikes, in particular), and partly because we use natural, pure ingredients, so we don’t need to add excessive amounts of sugar. The true flavors are already there—no need to try to “enhance” them with sugar.

At Pepilou's, we've chosen to use unrefined sugars for two main reasons:

  • They generally have a lower glycemic index than refined sugar, which helps mitigate those well-known blood sugar spikes;
  • They are more nutritious because they contain certain nutrients, unlike refined sugar, which is an "empty" sugar.
